Tips for Grilling Seafood

Prepare the grill for cooking seafood by applying vegetable oil to the grates with a grill brush. TIP: A great way to cook delicate fish is in a grilling basket. Alternatively, wrap and cook delicate fish in aluminum foil until done. 02 Brush a small amount of olive or vegetable oil on the outside of the seafood. 03 Adjust the grill for a medium (300-350° F) heat. 04 Place the seafood on the grill and cook. Cook seafood for 10 minutes per inch of thickness: 5 to 7 minutes on the first side, 3 to 5 minutes on the other side. Delicate fish such as snapper, salmon and sea bass should be turned carefully so they don't stick and fall apart. If cooking directly on the grids, use two metal spatulas, top and bottom, when flipping the fish. 05 Seafood is done when internal temperature is at least 145° F and it flakes with a fork. Another great option for cooking seafood, as well as other food, is using a grilling plank. The wood plank adds a unique flavor to your food.

Grilled Redfish On The Half Shell Recipe- By BBQGuys.com

Chef Tony prepares a south Louisiana favorite, in honor of the Gulf Coast, oil spill crisis. Beginning with only the freshest ingredients; you can't get fish much fresher than having a friend catch it for you. Chef starts with 2 red fish fillets and marinates them in: 1/4 cup- Worcestershire sauce 1/4 cup- extra virgin olive oil 1/4-1/2 teaspoon- cayenne pepper 1/4 teaspoon- dried thyme 1 Tablespoon- paprika Sea salt and fresh ground black pepper to taste 1 (small-medium)- yellow onion 1 (fresh)- lemon 2 (whole peeled)- garlic cloves 1 bunch (fresh)- parsley 1/2 stick (unsalted/diced)- butter Begin by adding the Worcestershire sauce and olive oil, next add your thyme, paprika, cayenne pepper, sea salt, and black pepper to taste. Next slice your garlic, onion, and half of your lemon into thin rings. Squeeze the half of the lemon that you did not slice, over your fish, then place the garlic and onion rings on top of fish; making sure to have the fillets flesh side up. Allow the fish to marinate for 15-30 minutes while you pre-heat your grill to a medium high heat. Once your grill is pre-heated, place your fish fillets (flesh side down) on your grill and allow them to sear for two or three minutes. Now turn your fish over, so they are scale side down, top them with reserved onion rings and pour some of your marinade over them. Pork Ribs

When grilling season arrives, pork ribs are a great way to feed a crowd at minimal cost. Today I'm going to share a Hawaiian-style pork ribs recipe made with pineapple juice and minced ginger. I promise you're going to love it! Chef Jason Hill of CookingSessions.com shares an amazing pork rib recipe that's sure to please. The pork rib cut we're using today is baby back ribs, which are also called loin ribs or back ribs. Each rack has about 10-14 bones. Pork spare ribs have less meat and are bonier and fattier than baby back ribs. To prepare our bbq pork ribs, you'll need about 1-2 racks, which will make 2-4 servings. First, boil the ribs on a slow boil for 90 minutes, then drain and pat dry. For this pork rib recipe, we begin with a great sauce. This sauce recipe makes enough for 2 racks of ribs. I'm using hoisin sauce as the base, but have found that not all hoisin sauces are created equal and your recipe will taste different based on the brand you choose. Hoisin is a sweet soy-based sauce made with garlic, vinegar and chiles. In a mixing bowl, combine 1 cup hoisin sauce, 1 tablespoon minced garlic, 1 tablespoon minced ginger (or garlic-shallot puree), 1 tablespoon pineapple juice, 1 tablespoon Sriracha sauce (Chinese chili paste) and 2 tablespoons honey. Baste the pork back ribs on both sides with the sauce. When preparing any pork rib recipes, it's always good to baste them on the grill too! How to Grill Whole Chicken - Weber Grill Knowledge

After preheating the grill to 500 degrees, brush the cooking grate clean and close the lid. Set up the grill for indirect cooking over medium heat, by turning the front control knob to medium, the middle control knob off, and the top control knob to medium. After preparing your chicken by removing the necks, giblets and any excess fat, brush the chicken in olive oil. Then season with kosher salt and pepper. Truss the chicken legs using butcher's twine. Fold the wingtips behind the chicken's back. Place the chicken, breast side up over indirect medium heat. Close the lid and grill for 1 1/4 - 1 1/2 hours. Open the lid and check to see if the chicken is done. Place a meat thermometer in thickest part of the thigh, not touching the bone. The thermometer should read 175 degrees Fahrenheit. If you don't have a thermometer, cut between the drumstick and the thigh. The meat should no longer be pink near the bone. My Perfect Steak Dinner (New York Striploin) HD

Really preferring the stove top grill pan method as of late. Don't have much access to a BBQ anyways. Just remember, have a good exhaust hood and keep the windows wide open. I've recently been trying out the Delmonico cuts, which is basically a Rib eye, with the bone out and it's easily my favorite steak. Cheaper than the strip and so juicy you can pull it apart with just a fork. No steak sauce for me thanks, just a nice dry steak rub or just plain old kosher salt and pepper will do. For those BBQ heads out there that frown upon grill pans, I suggest you give it a shot or maybe you're just overcooking your steaks :P Song is: Boards of Canada - Turquoise Hexagon Sun

Chef Chris Schlesinger: Latin Spice Crusted Mahi Mahi on the Smart Grill

James Beard award winning chef Chris Schlesinger of the East Coast Grill makes his Latin Spice Crusted Mahi Mahi with grilled avocado and pineapple salsa. Chris also shares three tips on grilling fish perfectly. Latin Style Grilled Mahi Mahi Ingredients 4 - 8 oz. Mahi fillets 2 T olive oil Spice Rub 1 T ground cumin 1 T ground coriander 1 T ground chile powder 1 T salt 1 T pepper Avocados 2 avocados cut in half 1 T olive oil Salt and pepper to taste Salsa 1 C small dice pineapple 1/4 C small dice red onion ¼ C small dice red pepper ¼ C fresh copped cilantro ¼ C line juice 1T pureed chipotle pepper Instructions Start a fire in charcoal grill. Rub Mahi with oil and spice mix. Rub avocados with oil and salt and pepper. When coals are uniformly covered in ash (30-40 minutes), fire is ready. Over a medium hot fire, grill Mahi steaks 5 -- 7 minutes per side. Grill avocados cut side down, 3 -- 5 minutes until golden brown. Combine salsa ingredients and toss. Custom BBQ Train Smoker Grill

Commercial BBQ Smoker Pit. Custom built wood or charcoal burning smoker pit. Front section has three separate charcoal compartments with electric igniters and grease shields and six large pull out grates assessable from both sides. The front unit is equipped with a draft induced blower which can be switched on for fast starting of charcoal or wood, it is also use to raise your cooking temperature quickly. The rear has a four shelf rotisserie which is use for roasted corn, chicken, ribs, briskets etc. which is also assessable from both sides. The upper rear section has two warmer shelves which holds six full size or twelve half size standard or disposable steam pans, it also has a seperate flue vent damper control. How To Slow Cook Ribs

In this video I'll show you how to slow cook BBQ spare ribs over charcoal. I should have mentioned that this video was taken when I was on vacation with some friends. We had to improvise and work with what we had. Just goes to show that you don't need all the fancy tools to grill some good food in a pinch. Special thanks to Mario for sharing his grilling knowledge. The key factor here is placing a tray of water inside the grill and next to the charcoal. This allows the ribs to be cooked with indirect heat. Place the ribs over the water and place the vent in the top of the grill over the ribs to get proper heat flow. We strongly discourage the use of lighter fluid because the fumes tend to add unwanted flavor to the meat. We want to make sure all the flavor comes from the charcoal, rub and hickory chips. When slow cooking it is important to keep the lid on. There is no need to keep looking at the meat for no reason. Check it once every hour as your tending to it.
